the plan
i realized that i have a purpose in life.
my purpose is threefold:
1) to culture the yeast from a bottle of gulden draak,
2) to brew a gulden draak clone therefrom,
3) to serve gulden draak on tap in my home.
so it is written, so it shall be done.
...
just maybe not any time soon.
#1 is tough because i've never done it and i'm not positive it's shipped with live yeast (most likely it is) that is healthy by the time it gets here (oh, right...). #2 is tough because the recipe i've found calls for >20lbs of grain and so far my record as a high-gravity all-grain brewer is (as far as i know) 50%. one AG/HG beer tested at about 7-8%abv on the Mike-o-meter, the other came out with a measured OG of 1050, which ain't "high", but could be measurement error (crossed fingers).
#3 is also an experimental idea: to "keg condition", which is to say, condition the beer similarly to how it's done for bottle conditioning: carbonate with reactivated yeast, age at room temps for some time.
and then, of course, #4 involves serving myself a 10.5%abv beer from the tap. 5 gallons of it. >stumble<
